I started this project for something for Olivia to take to LBP with her....as a treat for the kids who have been shuffled around this week and have been really good about the whole process. So I decided...okay, Olivia decided that she wanted m & m cookies. After being REALLY disappointed with the last batch, I tried a new recipe...worked out pretty well. Well, today I found something that said that you should stir by hand to prevent the breaking and falling apart. Hmmmmm mental note for next time. Although, truth be told, this recipe was already WAY better than the other that I used. So...here it is!
M & M cookies
4 ounces unsalted butter
1/2 cup shortening (I used butter flavored crisco)
3/4 cup sugar
3/4 cup brown sugar
1 1/2 teaspoon vanilla
1 egg
1 3/4 cups flour
3/4 teaspoon salt
1 teaspoon baking soda
3/4 cup M & M s
1/2 cup chocolate chips
Cream together butter and shortening until smooth
Add in the sugars and mis for 2 minutes, then....
Add vanilla and egg and mix until fluffy
Mix together: flour, salt and baking soda
THEN...add the flour mixture to the butter & sugar mixture
Fold in m & m s and chocolate chips
Bake at 350 for 10 minutes.
