
Almond Buttermilk Scones
I decided to make these on a whim. I started them at 9:00 pm and managed to get them done within about 90 minutes including baking time. Not too bad!! This was my first effort with scones, I look forward to trying different kinds. And I will be sending them all to work with Calvin. It appears that his row at Full Compass really enjoys them!

Buttermilk Almond Scones
*1 egg
*1 1/4 c. buttermilk
*2 tsp. almond extract
*4 c. flour
*4 tsp. baking powder
*1 tsp. baking soda
*1 tsp. salt
*1/2 c. sugar
*1 1/2 sticks butter
*2 c. toasted sliced almonds, chopped
Whisk together egg, buttermilk, and extract. Combine flour, baking powder, soda, salt, and sugar; cut in butter until mixture resembles coarse crumbs; add almonds.
Add liquid ingredients to dry mixture. Mix lightly with fork until mixture clings together and forms a soft dough. Turn dough onto lightly floured surface and knead gently 5 times. Divide dough into quarts and roll out to 1/2 inch thickness.
Cut into 6 wedges. Bake on greased sheet 12-15 minutes at 425 degrees. Before baking, brush with cream and sprinkle with sugar and a few almonds. Yields 2 dozen.
